Skirret is an old perennial root vegetable once much better known in British kitchen gardens. It develops into a hardy clump and produces clusters of long, sweet roots that can be roasted, sautéed, added to soups and stews, or eaten raw when young and tender. Seed-grown plants take a little patience, but once established they can return year after year.
